People always say this, but he's right handed in Skyward sword.  He is left handed in Ocarina of time though, so you're right there.

The way I see it- if it's not even important to the actual creators of the game what hand he holds the sword in; Why should I care?

you're implying they don't care?
The reason why he's right handed in Twilight Princess and Skyward Sword are because the Wii-mote was designed for the right hand. So they switched them so link's swinging arm is the same as your swinging arm.

I'm not really implying Nintendo doesn't care...I'm saying that if they switch the hands anyway why should it matter what hand I draw the sword in? 

 I can just say...oh well...sometimes Link uses his right.
